Today we are in Naples, in the heart of the Secondigliano neighborhood, with Maria who is going to show us how she makes a staple dish of the Neapolitan cuisine: Pasta e Patate. Here’s her recipe:
4 medium red potatoes
1 small onion
70g pancetta (unsmoked)
6 cherry tomatoes
1 celery stalk
Olive oil
300ml water
250g Pasta mista (short pasta mix)
150g Provola cheese (not smoked)
70g Parmigiano Reggiano
half a vegetable stock cube
Salt – to taste
Black pepper, to taste
