Japanese Curry Recipe
Ingredients
S&B Golden Curry Roux
Vermont Curry Roux
1 carrot
1 onion
2 to 3 potatoes
Water, per roux box instructions
Canned tomatoes
Method
Cut carrots and potatoes in "rangiri" style and set aside
Slice the onion and reserve half
Brown half of the onion for 10 to 15 minutes until deeply caramelized
Add vegetables, half a can of tomatoes, and water
Bring to a simmer, then add remaining onion
Lower heat and dissolve curry roux blocks
Simmer until thick and smooth, then serve
Chicken Katsu Recipe
Ingredients
2 chicken breasts
2 cups panko breadcrumbs
2 cups flour
2 large eggs
Salt and pepper
High-heat frying oil
Method
Cut chicken into even portions and tenderize to uniform thickness
Season with salt and pepper, white pepper works well
Dredge chicken in flour, egg, then panko
Fry in hot oil until golden brown and cooked through
Slice and serve over curry rice
