Who doesn't love carrot cake right?
Only problem ive found is that most tasty carrot cakes from coffee shops are almost 700kcal!
Give this a whirl..
Ingredients
Cake Ingredients
120g Oats
30g Coconut Flour
100ml Almond Milk/Oat Milk
200g Carrots
50g Vanilla Protein Powder
100g Total Greek Yoghurt 0%
35g Pecan Nuts
30g Coconut Oil
3 Large Eggs
2 Large Egg Whites
tsp Cinnamon
1 tsp vanilla essence
1 tsp almond essence
tsp Ginger
tsp Nutmeg
Orange Zest
6 tsp Stevia (Add more if needed/wanted)
Half tsp Baking Powder
Half tsp Bicarbonate of Soda
Frosting
500g Quark
15g Protein Powder
200g Total Greek Yoghurt 0%
Orange Zest
3 tsp Stevia (more if needed/wanted)
15g Pecan Nuts for decoration
Instructions
Blend Oats, Protein, Powder, Baking Powder and Spices and Sieve into bowl
Add Stevia and sliced and diced carrots
Whisk up Eggs and add the almond and vanilla extract to the mix then add to dry ingredients
melt coconut oil for 45 secs in microwave and add to mixture with 100g total greek yoghurt. add a little oat milk until mixture represents cake batter
add mixture evenly to pans and put at 200 degrees for 10-15 minutes
for frosting add the quark, greek yogurt, stevia, orange zest and stevia
once cakes have cooked leave to cool for 10 mins before adding frosting to the centre and outside
decorate and serve
