滑雞胸肉
翠玉瓜雲耳炒雞胸絲
材料:
雞胸肉2件
翠玉瓜2個
甘筍(細)1條
雲耳1兩
薑1小舊
蒜頭3粒
處理:
1. 雞胸肉,清水解凍。
2. 雲耳,清水浸軟。
3. 雞胸肉已解凍,用粗鹽1茶匙乸10分鐘,去除雪味、腥味及加入少許鹹味。
4. 雲耳已浸軟,清水沖洗乾淨,擎乾水,放碗內。
5. 翠玉瓜,用乾淨的百潔布洗淨表皮。
6. 蒜頭,去皮。
薑,去皮 ,切片。
7. 甘筍,切細片。
8. 翠玉瓜,打直1開2,打橫切薄片。
9. 雞胸,清水沖洗乾淨,廚紙索乾,切絲。
10. 雞絲調味:
a. 生粉1茶匙
b. 油1茶匙
c. 鮑魚汁1茶匙
撈勻。
烹調:
1. 大火在鑊中燒熱油1湯匙。
2. 放雞肉煎香。
3. 雞肉煎至表面金黃色,放上碟。
4. 爆香薑片、蒜頭,加入油1湯匙。
5. 放翠玉瓜、甘筍及雲耳。
6. 加入清水100毫升。
7. 加入鮑魚汁1茶匙。
8. 冚蓋,煮3分鐘。
9. 放雞肉回鑊。
10. 加入生粉芡至收汁,炒勻。
11. 完成,上碟,可享用。
Stir frying chicken breast with zucchini and black fungus
Ingredients:
Chicken breast 2 Nos.
Zucchini 2 Nos.
Carrot (small) 1 No.
Black fungus 1 tael
Ginger (small) 1 No.
Garlics 3 Nos.
Preparation:
1. Chicken breast, defrost with tap water.
2. Snow fungus, soak in tap water until it turns soft.
3. Chicken breast, season with cooking salt 1 tsp for 10 minutes, to remove unpleasant smells and tastes and add some salty taste to it.
4. Black fungus has been soaked well, rinse thoroughly. Hang dry. Put in a bowl.
5. Zucchini, rinse its surface with a clean scouring pad.
6. Garlics, get it peeled.
Ginger, get it peeled and sliced.
7. Carrot, cut in small slices.
8. Zucchini, divide into 2 shares vertically. Slice it horizontally.
9. Chicken breast, rinse thoroughly. Dry with kitchen towel. Get it shredded.
10. Season the chicken:
a. Tapioca starch 1 tsp
b. Oil 1 tsp
c. Abalone sauce 1 tsp
Mix well.
Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Fry the chicken well.
3. Chicken has been fried into golden yellow. Put on plate.
4. Fry the ginger and garlics well. Add oil 1 tbsp.
5. Put zucchini, carrot and black fungus.
6. Add water 100ml.
7. Add abalone sauce 1 tsp.
8. Cover up the wok. Cook for 3 minutes.
9. Put chicken into wok again.
10. Put tapioca sauce, fry until the sauce becomes thick.
11. Complete. Put on plate. Serve.
