Swedish Red Cabbage
This traditional Swedish recipe for red cabbage and apples is often served during the holidays. It is seasoned with brown sugar, apple cider vinegar, cloves and cloves. Be sure to serve it warm.

Ingredients
4 tablespoons duck fat or butter
2 apples, peeled and chopped
1 large red onion, chopped
2 pounds red cabbage, shredded (weight is approximate)
1/4 cup dark brown sugar
1/2 cup Dry red wine
2 tablespoons apple cider vinegar
1 teaspoon salt
1/4 teaspoon ground cloves
1 vegetable bullion cube or Better than Bouillon (optional)
Instructions
1. Melt butter in a heavy, large Dutch oven over medium high heat. Add apples, onion and cabbage sauté until tender, about 10 minutes. Stir frequently.
3. Stir in sugar, wine, vinegar, salt, and pepper. Cover and slow braise until cabbage is tender about 30 minutes more.
4. Bring back to a slow simmer and cook 5 minutes more. Taste, season with cloves and white pepper, adjust salt and seasonings to taste.
