Recipe for kesar pista nankhatai. It is one type of Indian cookie.
#Learn: The word Nankhatai is derived from Persian word Naan meaning bread and "Khatai" from a Dari Persian word meaning Biscuit.
#ingredients
Ghee
sugar power
Whole wheat flour
Maida
Gram flour
Semolina
Crushed pista
socked saffron
Cardamom powder
Backing Powder
#Recipe
Socked saffron in 1 tbsp of water before you start
Take a bowl and add 1/2 cup of ghee
Add 1/2 cup of sugar powder
Constantly whisk for 8-10 minutes (
This is an important process to make a batter light and fluffy
Now add 1/3 cup of whole wheat flour
Add maida 1/2 cup
Add Gram flour 1/3 cup
Add semolina 1 tbsp
Add Crushed pista 1tbsp
Add saffron which was socked in water
Add cardamom powder 1/2 tsp
Add baking powder 1/8 tsp
Mix all ingredients really well
If you get lumps because of besan, make sure to break and mash it properly with the help of a spatula
Prepare a dough
Once the dough is perfectly ready, make a small ball and place on a baking tray with proper space
Garnish with some pista slices
Time to bake -
Preheat oven for 10 minutes
Bake it in 160 for 15-20 min
Let is cool for 10 minutes
Your perfectly baked Kesar Pista Nankhatai is ready to eat :)
