Turkey and Rice Stuffed Aubergine Copy 2

Aubergines roasted, then scooped leaving the skin as a boat.
The aubergine is then cooked with turkey, garlic, tinned tomato & herbs.
Before adding cooked turmeric rice to the mixture.
The turkey & rice is then stuffed back into the aubergine (eggplant) shell.
