Noilly Prat is a quintessential dry vermouth that dates back to the late 18th century when a French merchant started to experiment with various wines, spirits, and botanicals that he had at hand. Ultimately, he tweaked the process which resulted in the 1813 recipe. While the Noilly Prat company was founded in the 1850s, the brand is today a subsidiary of the Bacardi conglomerate.

This vermouth results from a combination of Picpoul and Clairette wines that originate in Marseillan, France. These wines are left to oxidize for 12 months and then mixed with a Mistelle, high-proof alcohol, and various botanicals.

Noilly Prat is gold and yellow and slightly viscous. This evidences that there's sugar added though it's not very thick.

The nose offers a floral burst at first, as well as some camomile, spicy paprika, white pepper, lovage, Sorrell, and Bay leaf. The vermouth is not obvious, unlike with Martini dry vermouth. Here, it's more subdued yet not lacking in complexity and depth.

The taste is fresh and lively with notes of honey, thyme, and even rosemary is there. Then, the wormwood kicks in, providing bitterness through its very long finish. This dry vermouth is 18% with quite a bit of maturation, though it's not overpowering. Neither does it lose its primary fruit characteristics in spite of the depth and the richness.

There is a very pleasing evolution on the palette, beginning with fruitiness onto floral freshness. In between, the bitterness offers additional notes of white pepper. Towards the back, there is a prolonged bitter quality that carries everything into the finish.

06:44 How To Drink & Pairings
Noilly Prat is good to sip all by itself, though few drink it in this manner. Yet, it makes for a gorgeous wine to pair with meals. It could also be used for cooking.

Cocktail options include a dry martini, in a long drink with a little bit of bitter lemon, ginger ale, or tonic water over ice. When combined with a small snack, blanched almonds or raw walnuts will act as a proper complement.

If you enjoy a cigar with your spirit, consider a medium-bodied smoke from the Dominican Republic such as the La Galera from Jochy Blanco that I opted for.

The packaging is very unique and distinct. The liter bottle is slim, green, and quite familiar to those who collect spirits. The label is vibrant with golden elements. It proudly states the company name as well as the date. Other than that, since it's a very affordable bottle ($15-20 depending on your region) it's not overly fancy or glamorous.
