“Cavitation” in a Maple Syrup Evaporator

Does the frontmost compartment of your syrup pan sometimes stop boiling as hard as the other syrup compartments? This may be due to cavitation in the firebox. Cavitation means a void has developed between the firewood and the grates. This open space negatively affects the direction of the air flow in the firebox. Instead of the air from the Forced Draft System going through your firewood, it goes around it.
If your evaporator pan has a front compartment draw-off, it is especially important to make sure that that front compartment of your syrup pan is always boiling hard. This will help you run your evaporator more smoothly and have more consistent draw-offs.
To fix cavitation and get the front compartment boiling harder, add more firewood into the void.
