BALUSHAHI:
INGREDIENTS:
For the balushahi dough-
All purpose flour- 250 GM's
Pinch of baking soda
Baking powder-1/4 TSP
Curd-100gms(1/2 cup)
Melted butter- 50 GM's
For the sugar syrup-
Sugar-1 cup
Water-1/4 cup
Cardamoms crushed
Lemon juice-1 tsp
Mix the all purpose flour, baking soda and baking powder well. Add 50 GM's of melted butter to this. Mix well. Then add, 100 GM's of curd( not sour) to it .and mix well. Do not knead too much. Otherwise we will not the get the perfect texture for our balushahi. Let the dough rest for 20 mins
Meanwhile, prepare the sugar syrup. Boil 1 cup of sugar with 1/4 Cup water. Add crushed cardamom and lemon juice. Lemon juice prevents recrystallization of the sugar syrup. Make it to one string consistency. Keep it aside
Make lemon sized balls our the dough. Flatten it between ur palms. And press lightly on the center. Make sure the edges are not smooth.
Fry the balushahi in hot oil until golden brown. Transfer the hot balushahi to sugar syrup. Coat them well with sugar syrup. Let them rest for 10 mins( for the balushahi to absorb all the sugar syrup)
Your balushahi is ready to serve. Enjoy with your family and friends. Thank you.
