These lentil stuffed peppers are one of those recipes that feels special enough to serve, but comes together easily on a weeknight. I almost always have some version of the base ingredients in my refrigerator, which makes this a recipe I come back to again and again.
The filling is built with lentils, a cooked grain, sautéed onion and garlic, plenty of herbs, and just enough cheese to make everything feel comforting and familiar. It’s hearty, flavorful, and holds up beautifully as leftovers.
