In this episode of Bubble Child, we've got the lovely Céline from La Noix Tigrée (Tiger Nuts) in Paris. She's brought her cold-pressed tiger nut milk (which is not a nut by the way!) and we're making vegan pancakes with it. So delicious, so easy. FULL RECIPE BELOW.

** note: Tiger Nuts are not actually nuts. They're related to potatoes more than they are to seeds or nuts. Thus, if you're someone like me, and looking for a great vegan alternative to nuts or even seeds, these are fabulous! They're delicious, and taste what I imagine an almond to taste like, but a little more sweet. I'm so happy to have discovered Tiger Nuts, and the milk that Céline makes with them is really wonderful.
Tiger Nut Pancakes
vegan and gluten free
1 cup tiger nut milk (or other vegan milk of choice)
1/2 cup sorghum flour
1 cup tiger nut flour (can sub teff flour)
1 small banana or 1/2 large banana
1. Blend all ingredients together until homogenous and creamy. Should resemble a slightly liquid waffle batter.
2. Heat a bit of oil on a hot skillet and drop your desired sized pancakes with a ladle. Cook on one side until entire surface has bubbles and the bottom is browned to your liking. Flip, and cook until the pancake is cooked through and the other side is also browned.
3. Serve with your favorite fruit, syrup, and/or dry fruit or seed crumble. Delicious with honey!
