Описание: Chuka Soba Mitsufuji (中華蕎麦 三藤) serves Michelin Bib Gourmand awarded luxury Shoyu and Shio Ramen near Jiyugaoka station, which is in Tokyo’s Meguro ward. Mitsufuji aims for an overall elegant and luxurious feel to charm gourmets from all over the world. This starts with the appearance of the shop from the outside and inside and ends at the tip of your chopstick with and absolutely stunningly beautiful ramen bowl. But does beauty translate to good taste? At least the Michelin testers thought so and gave Mitsufuji a Michelin Bib Gourmand award for their Michelin worthy ramen.



The high quality theme permeates through the whole bowl and this ramen shop is especially proud of its selected ingredients. The ramen noodles are slurpy and square shaped, made from blended wheat from Iwate prefecture. Really great texture and well matched to the soup. The soup is a clear chintan soup mixed with a great shoyu tare made from Sugitaru Jikomi soy sauce from Kagawa prefecture. In addition to using the chicken for the broth and probably for the aroma oil, you also get a couple of sous-vide cooked juicy chicken from Tottori prefecture, called Ooyama-dori. I preferred the chicken over the great looking pork slices, which also seem to be cooked sous-vide, but were a bit chewy for my liking. If you go for the Shio ramen, you will be able to enjoy salt from the island of Tsushima in Nagasaki prefecture, all the way from the South of Japan. In general, it seems, this ramen store has a knack for getting their ingredients from all over Japan.
