You're probably thinking to yourself that of course Master Windu would go for a swing, stabs have an abysmal success rate. However, we all know that's simply not true in the Prequel trilogy, consider Darth Maul, cut in half and survived, whereas Qui Gon died after being poked in his tummy :(

Now, you're probably going to counter by bringing up Count Dooku, but in my heart I firmly believe that if Maul survived being cut in half and thrown down an apparently bottomless pit, and Palpatine can survive also being thrown down an apparently bottomless pit and then being exploded(?) then Dooku may as well have survived being decapitated.

I like to think he went on to escape the Invisible Hand and started a new life playing high stakes gambling games in the underbelly of Coruscant, where he'd see great success, despite lacking a body. He'd make puns like "I'm far ahead of you" or "oh, my head's not in this game," as he played and it would give everyone around him a good old chuckle. After many years and learning of Palpatine's first and second deaths, he'd finally retire at a ripe old age, peacefully passing away in his sleep a couple of years later, surrounded by his friends and loved ones. Perhaps he'd even repent of the dark side, returning to the light as he hears the voices of his old master and former padawn embracing him as he joins with the force.

Anyway, that's my Dooku Head Canon.
