1977 Wild Rice Turkey Casserole & Fresh Apple Cake

Today on Vintage Cookbooks and Crafts, I will be making two recipes from my 1977 ‘Pillsbury’s Cookbook of Family Favorites’. Fresh Apple Cake; and Turkey and Wild Rice Casserole. I often make this casserole after Thanksgiving to use up leftover turkey.
Recipes ~
Turkey and Wild Rice Casserole (pg. 42)
½ cup (1 medium) chopped Onion
½ cup Butter or margarine
¼ cup Flour
6-oz. can sliced Mushrooms
Chicken Broth (added to liquid from mushrooms to make 2 cups)
1 ½ cups Half and Half or Light Cream
3 cups cooked cubed Turkey or Chicken
1 cup uncooked combination wild and regular Rice
2-oz jar Pimento, drained and chopped
2 Tablespoons Parsley Flakes
1 ½ teaspoons Salt
¼ teaspoon Pepper
½ cup slivered Almonds
Sauté onions in butter over low heat (do not brown). Blend in flour. Cook over low heat, stirring until mixture is bubbly. Remove from heat. Stir in broth, mushroom liquid and half and half. Heat to boiling, stirring constantly. Boil and stir 1 minute. Add mushrooms, turkey, rice, pimento, parsley, salt and pepper. Pour into ungreased 2-quart casserole. Cover and bake at 350°F for 1 hour. Uncover; sprinkle with almonds. Bake 15 minutes longer until rice is tender.
8 servings.
TIP: Increase baking time 10 to 15 minutes if all wild rice is used.
NOTE: I use Uncle Ben’s Long Grain & Wild Rice that comes with a seasoning packet; and drastically reduce the Parsley and Salt called for in the recipe.

Fresh Apple Cake (pg. 67)
½ cup Shortening
1 cup Sugar
½ cup firmly packed Brown Sugar
2 teaspoons (baking) Soda
1 cup Buttermilk
2 Eggs, beaten
2 ¼ cups Pillsbury’s Best All Purpose or Unbleached Flour
½ teaspoon Nutmeg
½ teaspoon Cinnamon
¼ teaspoon Cloves
¼ teaspoon Salt
2 cups (2 or 3 medium) chopped Apples
TOPPING:
½ cup chopped Nuts
¼ cup Sugar
¼ cup firmly packed Brown Sugar
1/8 teaspoon Cinnamon
Preheat oven to 350°F. Grease and flour 13x9-inch pan. (Lightly spoon flour into measuring cup; level off.) Cream Shortening, 1 cup sugar and ½ cup brown sugar. Dissolve soda in buttermilk; stir into shortening mixture. Add eggs, flour, spices and salt; beat until thoroughly mixed. Fold in apples; pour into pan. Combine Topping ingredients; sprinkle over batter in pan. Bake 35 to 45 minutes until wooden pick inserted in center comes out clean.
12 to 15 squares
TIP: To substitute for buttermilk, use 1 tablespoon vinegar or lemon juice plus enough milk to measure 1 cup.
(I used reconstituted powdered Buttermilk)
