Ingredients:
For the yellow rice:
• 1 cup Allsome Long Grained Parboiled White Rice
• 4 cups water
• 1 tbsp turmeric
• 1–2 cinnamon sticks
• ½ tsp salt
• 1–2 cardamom pods
• ¼ cup raisins
For the curry:
• 2–3 chicken breasts, cubed
• 2 tbsp masala mix (your favourite blend)
• 1 onion, finely chopped
• 1 tbsp crushed garlic and ginger
• ½ tin chopped and peeled tomatoes
• 1 potato, cubed
• Salt, to taste
• Fresh coriander, for garnish
• Chutney, for serving
Method:
For the yellow rice:
1. In a pot, bring 4 cups of water to a boil.
2. Add turmeric, cinnamon sticks, cardamom pods, salt, and rice. Stir once.
3. Reduce heat, cover, and simmer for 15–20 minutes, or until rice is cooked and fluffy.
4. Stir in raisins before serving.
For the curry:
1. In a large pan, heat a little oil and sauté onions until golden.
2. Add garlic and ginger, then stir in masala mix to release the spices.
3. Add chicken cubes and cook until lightly browned.
4. Stir in chopped tomatoes and potato cubes, season with salt, and simmer for 20–25 minutes until chicken is cooked and potatoes are soft. Add a splash of water if needed.
