Fish & Chips 🐟🍟🇬🇧
Ingredients (for 4 servings):
French fries:
• 1.2 kg russet potatoes
• 1 l sunflower oil for frying
• 50 ml vinegar
• salt (to taste)
Crispy beer-battered fish:
• 1 kg cod fillet (or any white fish you like)
• 1 l sunflower oil (same as for fries)
• 300 g flour
• 10 g smoked paprika
• 15 g garlic powder
• 8 g white pepper
• 5 g black pepper
• 20 g salt
• 1 egg
• 400 ml lager (any blond beer, filtered or unfiltered, works great)
Gribiche sauce:
• 200 g mayonnaise
• 10 g spring onion (or chives if available)
• 30 g pickled cornichons
• 20 g capers
• 25 g Dijon mustard
• 10 ml vinegar
• 3 g pepper
• 2 garlic cloves (grated on microplane)
• 10 g chopped parsley
• 1 boiled egg (pushed through a coarse sieve)
Plating:
• lemon wedges
• flaky salt

Quick recipe:
Fries:
• Wash, peel, and cut potatoes thick as a finger.
• Boil in salted water until cooked.
• Fry once on medium heat, chill in the fridge, then fry again on high heat until golden and crispy.
Fish:
• Use cod (or other white fish), remove the skin and cut into ~12x5 cm pieces.
• Make a batter with flour, paprika, garlic powder, white pepper, salt, egg, and lager.
• Season the fish, coat in flour, dip in batter, and fry 4–5 minutes at 180°C until crispy.
Gribiche sauce:
• Chop spring onion, cornichons, and capers.
• Mix with mayo and mustard, season with salt, pepper, and vinegar.
• Add grated garlic, parsley, and sieved boiled egg.
Plating:
• Arrange crispy fish, double-fried fries, and gribiche sauce.
• Garnish with lemon wedges.
