This recipe yields two 4x2 inches ramekins
Ingredients:
1. Unsalted Butter - 1 tablespoon
2. All-Purpose Flour - 1 tablespoon
3. Milk - ½ cup (cold)
4. Semi-Sweet Chocolate - 100 grams (you can use 75% dark chocolate if available)
5. Salt - a pinch
6. Vanilla Essence - ½ teaspoon
7. Egg Yolk - piece (medium size)
8. Egg Whites - 2 pieces (medium size)
9. Granulated Sugar - 3 tablespoon
10. Instant Coffee - ½ teaspoon
11. Cocoa Powder - garnish
Instructions:
• Butter ramekins and dust with granulated sugar.
• In a saucepan, melt butter over low heat. Add flour and whisk for about 1 minute until well combined. Add cold milk and whisk continuously until the mixture smooths out and thicken.
• Pour it over a bowl of prepared chocolate, add in salt and coffee, whisk until the chocolate melts complete and combined. Let it cool on slightly then whisk in 1 egg yolk.
• In another bowl, use an electric mixer to beat 2 egg whites at medium speed until the mixture is fluffy. Add sugar, 1 tablespoon at a time. Beat until white holds firm peak and looks glossy.
• Gently whisk one-third of the egg whites into the chocolate mixture to lighten up the mixture. Then fold in the remaining whites until well combined.
• Pour the mixture into the prepared ramekins.
• Rub your thumb around the inside of the rim to create about a ¼ inch space between the dish and the mixture. This will help the souffle to rise up straight.
• Bake in 250 degrees Celcius pre-heated oven for 12-15 minutes
