Who's ready for a plate of #CheesyBakedSpaghetti? 🍝😍 This is one of our favorite childhood dishes. It's comforting, sweet and the recipe is great for kids too. 😋 Now let's go eat! 😊
CHEESY BAKED SPAGHETTI RECIPE ✨
Ingredients:
8 pcs white button mushrooms, sliced
3 cups nut loaf, diced (you can also use other meat substitute)
1 onion, diced
3/4 cup plant-based milk
1/4 cup nutritional yeast
5 cloves garlic, diced
1 tbsp. white vinegar
1 tbsp. smoked paprika
1 tbsp. soy sauce
1/4 cup maple syrup
1 tbsp. Italian seasoning
500 ml pasta sauce
250 g spaghetti pasta
2 tbsp. raw sugar (optional)
*For the toppings: (optional)
Italian Seasoning
VEGAN CHEESE SAUCE INGREDIENTS:
1/2 cup cashew nuts
500 ml hot water
1 tsp tapioca starch
4 tbsp. nutritional yeast
1 tsp miso paste
3/4 cup plant-based milk
juice of 1 lemon
salt and pepper to taste
Method
In a large pot, cook the spaghetti noodles for 10-12 minutes or according to package instructions.
While waiting for the pasta to cook, sauté the garlic, onion, nut loaf, mushrooms, soy sauce, salt and pepper to taste, plant-based milk, maple syrup, smoked paprika, pasta sauce, nutritional yeast, add 2 tbsp. raw sugar (optional) and Italian seasoning. Stir well and cook for 3-5 minutes.
Prepare the Vegan Cheese Sauce:
Soak the cashews in 500 ml hot water for 30 minutes and set aside.
In a high-speed blender, add the cashews, tapioca starch, nutritional yeast, miso paste, plant-based milk, juice of 1 lemon and salt & pepper to taste. Blend until you have a creamy and smooth consistency.
Assembly:
We used a small casserole for this video but for this recipe, you can actually fit the spaghetti mixture to a 23 cm x 19 cm x 6 cm baking dish. 😊
Spread 1 cup of the pasta sauce onto the bottom of the baking dish. Next add some of the cooked spaghetti noodles, then 2 cups of the pasta sauce and then pour half of the vegan cashew cheese sauce. Repeat the process until you make 2 layers. Top with more Italian seasoning and bake in the oven for 15-20 minutes at 200 degrees Celsius. Serve immediately and enjoy!
