Leftover Turkey Carcass makes for a great Turkey Stock for Soups, Stews and much more. Don't waste the turkey meat left on the bones. Take it and make an easy and tasty stock you can use to make a hearty turkey soup with vegetables, noodles or rice. You can use the stock and leftover meat for stews , casseroles and turkey pot pies too.
RECIPE
1 turkey carcass leftover from a cooked turkey
6 quarts of water
2 sprigs of fresh rosemary
2 sprigs of fresh sage
1 sprig of thyme
1 cut up white onion
2 sticks of cut up celery
2 cut up carrots
a pinch or two of salt and pepper (not too much because your turkey was probably seasoned)
Instructions: In a large soup pot, place the turkey carcass in the pot. Pour in water to cover the carcass. Add in the rest of the ingredients and bring to a boil. Once boiling, reduce heat to medium low and let simmer for two hours. Scoop out as much of the bones and meat from the broth. Separate the meat from the bones and skin and discard. Take the rest of the broth and pour through a fine strainer to sift out the vegetables, herbs and any remaining meat and bones. Pick out meat if you can and discard the rest. You now have a wonderful turkey stock. You can freeze the turkey stock and use another time. Enjoy!
