Chocolate Chip Cookies
2 & ¼ cup King Arthur All-Purpose Flour
1 tsp baking soda
1 tsp salt
1 cup Country Crock plant based butter (2 sticks) Room Temperature
¾ cup sugar (use sugars that are safe for you.)
¾ cup brown sugar
1 tsp vanilla extract
Egg Substitute equal to 2 eggs: 4 Tbsp water, 2 Tbsp olive oil, and 1 Tbsp baking powder
1 package Enjoy Life Semi-Sweet Mini chocolate chips.
Preheat the oven to 375 degrees.
Combine flour, soda, and salt in a medium bowl.
Beat (plant-based) butter and both sugars in a mixing bowl; then add the egg substitute and vanilla extract. Mix to combine.
Slowly add the flour mixture.
Stir in chocolate chips by hand and form into 1Tbsp sized cookies.
Place on Parchment lined cookie sheets.
Cook for 8 to 10 minutes. Let cool for 2 minutes, then transfer to a wire rack to cool completely.
This makes 7 dozen small cookies.
