Koval (Tindora) Leaf Thoran
Ingredients:
Koval (Tindora) Leaf, chopped finely - 4 glasses
Shallots, chopped - 1 1/2 glass
Green Chilly, chopped - 3
Grated Coconut - 1 glass
Garlic - 4 small pods
Mustard Seed - 1 tsp
Dried Red Chillies - 2
Urad Dal / Uzhunnu Parippu - 2 tsp
Curry Leaves - a few
Turmeric Powder - 1/2 tsp
Coconut Oil - 1 tbsp
Salt - as needed
Instructions:
Grind grated coconut and garlic coarsely in a dry mixie jar and keep this aside.
Add coconut oil, mustard seeds, urad dal, red chillies and curry leaves to a hot pan.
Once this turns brown, add onion and green chilly.
Saute this until it is cooked.
Add chopped leaf, turmeric powder and salt.
Cover and cook on low flame.
Once this is cooked, add the ground coconut.
Mix this well and turn off the flame.
Koval ila thoran is ready to be served.
Nellikka (Amla) Rasam
Ingredients:
Amla - 6
Shallots - 8
Garlic - 10 small pods
Tomato (big) - 2
Cumin Seeds - 1 1/2 tsp
Black Pepper Corns - 2 tsp
Turmeric Powder - 2 tsp
Coriander Powder - 1 1/2 tsp
Chilly Powder - 1 1/2 tsp
Asafoetida - 3/4 tsp
Tamarind - 1 amla sized ball
Curry Leaves - as needed
Water - 7 glasses
Coriander Leaf - a few sprig
Jaggery Powder - 1 tsp
Coconut Oil - 1 tbsp
Mustard Seeds - 1 1/2 tsp
Salt - as needed
Instructions
Dry roast cumin seeds, black pepper corns and curry leaves for a few minutes.
Once this is almost done, add coriander powder, chilly powder, turmeric powder and mix this and turn off the flame.
Cool this and powder this in a dry mixie jar.
To this, add chopped amla, and grind this again without any water.
Transfer this mix to a pot for making rasam.
Soak tamarind in 2 glasses of water.
Grind chopped tomatoes, shallots and garlic in a mixie jar.
Add this to the same pot and mix this thoroughly.
Add tamarind water to the pot.
Keep the pot in the flame.
Add 1/2 tsp turmeric powder and salt.
Add the remaining 5 cups of water, some curry leaves and jaggery powder.
Mix this and let it boil.
Turn off the flame and add chopped coriander leaves.
For the seasoning:
Add coconut oil to a small pan.
Add mustard seeds, curry leaves and dried red chilly.
Saute this and turn off the flame.
Add a pinch of asafoetida and add this to the rasam.
Yummy amla rasam is ready.
