Hey bread lovers 👋
Welcome to HEALTHY BREAD LAB, where bread isn’t just food… it’s a whole experience.
Today I made a very special loaf using a mix of flours, and honestly?
It turned out way better than I expected.
Soft crumb, deep flavor, and that smell that makes you lose all self-control.
I’m not proud of it… but I ate the whole loaf myself 😅
No regrets. Zero.
🧺 Ingredients:
White flour: 320 g
Chickpea flour: 30 g
Rye flour: 20 g
Barley flour: 20 g
Easy Roggen: 10 g
Instant yeast: 6 g
Active sourdough starter (optional): 60 g
Sugar: 8 g
Salt: 8 g
Butter (room temp): 45 g
Water: 250–260 g (add slowly and feel the dough)
⏳ Resting & Fermentation:
First rest: 45 minutes
Bench rest: 10 minutes
Final proof: until doubled in size
(for me, about 1 hour)
🔥 Baking:
Preheat oven to 220°C
Bake 7 minutes with steam
Then 8 minutes with bottom heat only
Finish with 13 minutes at 195°C using top & bottom heat
Until golden and beautiful ✨
