Ingredients:
1 lb burpless cucumbers
3 tablespoons kosher salt
2 cups distilled vinegar
3/4 cup water
1/2 cup agave syrup
5 cloves of garlic, smashed
Fresh dill (to taste)
2 green habanero peppers, sliced
3 jalapeño peppers, sliced
Instructions:
1. Prep the Cucumbers: Wash and slice your burpless cucumbers into spears or rounds, whichever you prefer.
2. Create Brine: In a saucepan, combine distilled vinegar, water, agave syrup, and kosher salt. Bring the mixture to a boil, stirring occasionally until the salt and agave are fully dissolved.
3. Pack the Jars: Place smashed garlic cloves, fresh dill, and slices of habanero and jalapeño peppers into sterilized jars. Add the cucumber slices on top.
4. Pour the Brine: Carefully pour the hot brine into each jar, covering the cucumbers fully.
5. Seal and Store: Seal the jars tightly and let them cool at room temperature. Once cooled, refrigerate for at least 24 hours to let the flavors meld together.
