Dum aloo is one of the famous Indian curry which is very tasty and too delicious. Alur Dom is also very popular dish in Bangladesh specially with the baby potato. Though this tasty aloor dom has many different way to cook according to different tradition and taste, this bangali style alur dum has it's own Bangladeshi flavour.
Mainly, Aloor Dom is originally from Kashmiri Cuisine. This dish is cooked with small new potatoes along with green peas and other spices. In Bangladeshi cuisines, we usually use onion and garlic, with the onion and garlic this dum aloo tastes, even more better. But vegetarian Bangali Alur doom can be cooked without onion and garlic, for more taste you can add some sour curd.

বাংলাদেশী আলুর দম, সাধারণত নতুন আলু দিয়ে আলুর দম খাওয়ার মজায় আলাদা। কিন্তু চাইলে যেকোন আলু দিয়েই আলুর দম করা যাবে। শীতকালীন এই সময়টাতে নতুন ছোট ছোট আলু দিয়ে তৈরি আলুর দম আর সাথে ফুলকো লুচি কিংবা ঝাল-মশলা, তেঁতুলের টক !! খেতে কিন্তু অসাধারণ...

❇️ তৈরী করতে লাগছে - (Ingredients)
আলু (Potato) - 1 kg
সরিষার তেল (mustard oil) - 3/4 Cup
শুকনা মরিচ (Dried Red Chili) - 3 pcs
দারচিনি (Cinnamon Stick) - 3 pcs
সবুজ এলাচ (Green Cardamon) - 2 pcs
তেজপাতা (bay leaf) - 2 pcs
পাঁচ ফোঁড়ন ( Panch Phoron) - 1/2 Tbs
মরিচ গুড়া (Red Chilli powder) - 1/2 Tbs
হলুদ গুড়া (Turmeric powder) - 1/2 Tbs
ধনিয়া গুড়া (Coriander powder) - 1/2 Tbs
লবণ (Salt) - to taste
পেঁয়াজ বাটা (Onion paste) - 1/2 Cup
রসুন বাটা (Garlic paste ) - 1/2 Tbs
আদা বাটা (Ginger paste) - 1/2 Tbs
চাট মাসালা ( Chat Masala) - 1 tsp
ভাজা জিরা গুড়া (Grilled Cumin Powder) - 1 tsp
গরম মসলা গুড়া (Garam Masala) - 1/2 tsp
তেঁতুলের টক (Tamarind) - 2 Tbs
চিনি (Sugar) - 1/2 tsp
