INGREDIENTS
Bitter gourd – 2
Tamarind –lemon size
Garlic – 8 flakes
Turmeric – ¼ teaspoon
Salt as needed
Oil – to fry
TO ROAST
Chana dal – 2 tablespoon
Urad dal – 2 tablespoon
Coriander seeds – 2 teaspoon
Grated coconut – 2 tablespoon
sesame seeds 2 tablespoon
curryleaves
red chilly 7/8
METHOD
Wash and remove the middle part (seeds) of the bitter gourd. Chop finely. Mix salt and turmeric and keep aside for atleast 30 mins. Squeeze the excess water well after 30 mins.
1-squeeze
Heat oil and fry the chopped butter gourd until golden in colour, not until its burnt.
2-fry
Drain excess oil in paper towel. Dry roast other ingrediants until golden.
2-roast
. cool down all the ingredients roasted
. Add jaggery and tamarind.
4-roasted
Grind all these ingredients into slightly coarse powder along with salt.
