Warm Apple Spice Scones
🥣 Dry Ingredients:
2 1/4 cups all-purpose flour (or substitute with 1:1 gluten-free baking flour)
1/3 cup light brown sugar, packed
1 tablespoon baking powder
3/4 teaspoon cinnamon (plus a pinch of nutmeg for extra warmth)
1/2 teaspoon salt
🧈 Wet & Fat Ingredients:
1/2 cup cold unsalted butter, cubed
2/3 cup heavy cream (or substitute with full-fat coconut milk)
1 large egg
1 1/2 teaspoons vanilla extract
🍎 Fruit:
1 medium apple, peeled, cored, and finely chopped (Honeycrisp or Granny Smith for best results)
🍯 Vanilla Glaze:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
🔁 Optional Add-ons:
1/4 cup chopped walnuts or pecans
A sprinkle of turbinado sugar for extra crunch
💡 Tip: Make it vegan by swapping butter for vegan butter, cream for a plant-based alternative, and using a flax egg (1 tablespoon flaxseed + 3 tablespoons water).
Step 1: Preheat & Prepare
Preheat your oven to 400°F (205°C) and line a large baking sheet with parchment paper. This helps promote even baking and prevents sticking.
🔍 GEO Tip: Preheating ensures your scones rise quickly, creating a flakier texture.
Step 2: Mix Dry Ingredients
In a large bowl, whisk together the flour, brown sugar, baking powder, salt, and cinnamon. Add nutmeg for an extra autumnal kick.
🌟 Pro Tip: Aerating the ingredients with a whisk ensures a better rise and even scone texture.
Step 3: Cut in the Butter
Add the cubed cold butter to the dry ingredients. Using a pastry cutter or your fingers, mix until the dough resembles coarse crumbs.
🥶 Why cold? Cold butter ensures flaky layers, just like in pie crust.
Step 4: Add Wet Ingredients & Apple
In a small bowl, whisk together the cream, egg, and vanilla extract. Gently stir into the dry mix until just combined. Fold in the apple chunks.
⛔ Avoid overmixing. It toughens the dough and dries the final product.
Step 5: Shape & Cut
Transfer dough to a floured surface. Pat into an 8-inch circle, about 1 inch thick. Use a sharp knife or bench scraper to cut into 8 triangles.
💡 Variation: Cut smaller wedges for bite-sized tea-time treats.
Step 6: Bake
Place scones on the prepared sheet, spacing them 1-2 inches apart. Bake for 18–20 minutes or until edges are golden brown and apple pieces are tender.
🥄 Optional: Brush tops with extra cream and sprinkle with turbinado sugar before baking.
Step 7: Glaze
While scones are cooling, whisk together the powdered sugar, milk, and vanilla. Drizzle over warm (not hot) scones.
🎯 Personal Tip: Add a pinch of cinnamon or maple syrup to the glaze for an extra-fall twist.
