The Paper Plane is such a popular modern classic cocktail recipe now, I had to make one on the channel but since you guys seem to love the clarification process... I thought to make it both ways and see which one wins the fight for the best cocktail.

Why would you want to know how to clarify cocktails with milk? Because it changes the mouthfeel, the taste, smoothens the rough edges the cocktail may have... and NO IT DOESN'T TASTE LIKE MILK!!!

If you guys are ready, follow my tips and tricks to understand how to make clarified cocktails and nail it every time!

Paper plane cocktail recipe

Ingredients
1 oz Bourbon
1 oz Aperol
1 oz Amaro Nonino
1 oz Fresh lemon juice

To make the clarified milk punch recipe version you will also need 1 oz of whole milk.

Method
In a mixing glass, pour your bourbon, lemon juice, Aperol Nonino and mix

In another mixing glass, pour your milk

Pour your cocktail mix over the milk

Filter through cheese cloth or coffee filter

Wait a few seconds and pour the few first drops over the unfiltered mixture. The first drops are always a little cloudy.

If you feel you need a second filtration, do it over the curdles. DON'T THROW THEM AWAY! You need them to make the clarification work.

Then, bottle it up and keep in the fridge or stir briefly over ice in a mixing glass and strain over fresh ice in a rocks glass.
