Same gooey caramel and silky ganache, but with a quick, crunchy cookie crust instead of pastry - no oven needed.

Ingredients
For the Biscuit Base:
• Digestive biscuits (or Graham crackers) – 200 g crushed
• Unsalted butter, melted – 100 g | 7 tbsp
• Soft light brown sugar – 25 g | 2 tbsp (optional)
For the Caramel Filling:
• Soft light brown sugar – 150 g | 10 tbsp |
• Unsalted butter – 60 g | 4 tbsp
• Golden syrup – 30 ml | 2 tbsp
• Sweetened condensed milk – 200 g | 14 tbsp | ⅔ UK cup | ⅔ US cup
For the Chocolate Ganache:
• Dark chocolate (50–60% cocoa), chopped – 150 g |1 UK cup | 1 US cup
• Double (heavy) cream – 120 ml | 8 tbsp | ½ UK cup | ½ US cup
• Unsalted butter – 20 g | 1 ½ tbsp | 1 ½ tbsp UK/US
NOTE _ SORRY BAD EDIT - Make the Chocolate Ganache
1. Heat cream until steaming, then pour over chopped chocolate. Let sit 1 minute, then stir smooth.
2. Stir in butter for shine.
3. Spoon or pipe over caramel layer and smooth the tops.
4. Chill for 30–40 minutes until set.
