Pineapple Layered Angel Food Cake
1-1/2 cups Cake Flour
1/4 teaspoon Salt
12 large Egg Whites at room temp
1-1/2 teaspoons Cream of Tartar
1-3/4 cup White granulated Sugar
1 teaspoon Vanilla Extract
1 teaspoon Almond Extract
(1) Sift flour & salt in a bowl.
(2) Beat egg whites until foamy (1 minute). Add cream of tartar and beat until soft peaks form (1 minute).
(3) Gradually add sugar and beat until stiff peaks form (2 minutes) and the mixture becomes glossy. Add extracts and beat just to stir in.
(4) Sift and gradually stir in flour mixture.
(5) Pour into a NON-GREASED Angel Food Cake pan.
(6) Bake at 325 degrees F for 55 to 60 minutes until it springs back when gently pressed. Let cool UPSIDE DOWN for 1 hour.
