Cooking up some Smoked Trout on the SmokeNorth Offset!!!!!
It's summer and there is plenty of fish to go around, I was fortunate enough to have my Brother in Law send down some lake trout from Labrador. I placed them in a quick brine and smoked them to perfection!!! Such and easy and quick cook and can work for any red fleshed fish, such as Salmon, Char or German brown. Brine:
enough water to cover the Trout
2 TBSP of Koser salt
2 TBSP of Lakanto Brown sugar sweetner
and 1 Bay Leaf
Brined for 2 hours but you can leave them in overnight if you want.
