Dhotu mah or Dhotia mah is the famous dish of Bilaspuri Dham( Himachal Pradesh). Dham recipes are prepared without onion and garlic. In Dhotia mah recipe urad dal is cooked in a very different and unique style. Soaked and skinned urad dal is cooked in desi ghee and spices soaked in milk, cooked at low flame. Dhotu mah is served with rice.
ingredients (serve 2-3)
skinned or split black gram-1/2 cup
desi ghee (clarified butter)-1/2 cup
milk-1/2 cup
dessicated coconut-3-4 spoon
asafoetida-1 pinch
roasted cumin powder-1/2 spoon
coriander powder-1/4 spoon
ginger powder-1/4 spoon
cinnamon
black cardamom-1
cardamom-1
clove-2
star anise-1
bay leaf-1
fennel-1/2 spoon
turmeric-1/4 spoon
mace
salt-1/3-1/4 spoon
water-2 & 1/2 cup
