Strawberry Pineapple Pound Cake
Ingredients:
1 1/2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
2 large eggs
2 cups diced fresh strawberries
1 cup diced fresh pineapple
1 teaspoon vanilla extract
Instructions:
Preheat and Prep: Preheat oven to 325°F (165°C). Grease a 9x5-inch loaf pan and set aside.
Mix Dry Ingredients: In a medium bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
Cream Butter and Eggs: In a large bowl, use an electric mixer to cream the butter until light and fluffy. Add eggs one at a time, beating well after each addition.
Add Dry Ingredients: Gradually add the dry ingredients to the butter mixture, beating until just combined.
Fold in Strawberries and Pineapple: Gently fold in diced strawberries and pineapple.
Add Vanilla Extract: Add vanilla extract and mix until combined.
Pour into Loaf Pan: Pour the batter into the prepared loaf pan and smooth the top.
Bake: Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
Cool: Remove from oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
