Who doesn’t love pasta? 🍝 But today I’m sharing a pasta recipe with a unique desi twist – made from leftover dough! Yes, the same dough we use for chapati/roti can be turned into a delicious, healthy, and guilt-free pasta at home.
This recipe is viral for a reason – it’s simple, quick, and so tasty that you’ll forget about market-bought maida pasta. With just a few ingredients and spices from your kitchen, you can create a comforting, homemade pasta that’s perfect for rainy evenings, kids’ lunchboxes, or even a light family dinner.
What makes it even more special is the mustard oil tadka with cumin, mustard seeds, garlic, and fresh veggies – giving the pasta a unique flavor and an Indian touch. The pasta water also turns into a light soup, making the dish wholesome and filling.

📌 3. Ingredients List
🔅Leftover dough / fresh dough – 2 cups (kneaded hard)
🔅Fresh flour – ½ cup (for tightening dough)
🔅Water – 1 liter
🔅Salt – as needed
🔅Oil – 1 tbsp (for boiling pasta)
💢For tadka & gravy:
🔅Mustard oil – 2–3 tbsp
🔅Cumin seeds – ½ tsp
🔅Mustard seeds – ½ tsp
🔅Garlic – 5–6 cloves (chopped)
🔅Onion – 1 (finely chopped)
🔅Ginger – 1 tbsp (grated)
🔅Green chilies – 2–3 (finely chopped)
🔅Tomato – 1 (finely chopped)
🔅Capsicum – ½ (chopped)
🔅Carrot – ½ (chopped)
🔅Coriander powder – ½ tsp
🔅Turmeric powder – 1 tsp
🔅Red chili powder – ½ tsp
🔅Maggi Masala – 1 packet (or 1 tsp)
🔅Green chili sauce – 1 tbsp
🔅Tomato sauce – 1 tbsp
🔅Fresh coriander leaves – handful
📌 4. Recipe (Step by Step)
✨Prepare Dough:
Take leftover dough, add ½ cup flour, and knead it into a hard dough.
Dough should break easily (not stretch).
👩🍳Shape Pasta:
✨Roll a medium ball into thin sheet, cut into small pieces.
✨Use a fork: press ball back → forward → roll → pasta shape ready.
👩🍳Boil Pasta: Heat 1 liter water, add ½ tsp salt & 1 tsp oil.
✨Add pasta, boil 7–8 mins.
✨Strain pasta, save pasta water (for soup), rinse pasta in ice-cold water.
👩🍳Make Masala Base:
✨Heat 2–3 tbsp mustard oil, add cumin + mustard seeds.
✨Add garlic, onion → sauté till translucent.
✨Add ginger, chilies, tomato, little salt → cook till soft.
✨Add capsicum, carrot, sauté lightly.
👩🍳Spices & Sauce:
✨Add coriander powder, turmeric, red chili, Maggi Masala.
✨Add 1–2 ladles of pasta water.
✨Mix in chili sauce & tomato sauce.
👩🍳Add Pasta:
✨Put boiled pasta in masala.
✨Mix well, cook 1–2 minutes.
👩🍳Finish & Serve:
Garnish with coriander.
Serve hot with light soup made from pasta water.
💡 Tip: Always add oil while boiling pasta so it doesn’t stick.
