Nanban Zuke is a versatile, tart and refreshing dish made of vegetable and protein like chicken and seafood. It has a flexible recipe that can be altered and improvised based on the ingredients you have on hand. This video is meant to provide a framework recipe that you can adapt to your available ingredients and your preferences.
In this demonstration, I used light colored soy sauce called ‘Usukuchi shoyu’, in order to preserve the vibrant color of the vegetables. Though I sometimes use dark soy sauce as well.
Nankan Zuke Recipe:
1 lb Salmon, lightly salted
1 package of Tofu, pressed ahead of time to drain
A few TBS potato starch to dust
Sauce:
1 Cup Kombu Stock (or dashi)
1/2 Cup Rice Vinegar
4 TBS Mirin (If you don’t have mirin, try something like 3 TBS Sake/white wine & 1 TBS Maple Syrup/Honey)
4 TBS Usukuchi Soy Sauce (Light color soy sauce)
1 dried chili, seeded
Vegetable:
Yellow bell pepper, 1/2 Red Onion, 1/2 Sweet Onion, Carrot, Trumpet mushroom, Ginger, Cilantro
