Ingredients (makes 6 ensaymadas):
Dough*
59mL Warm whole milk (100°-110°F)
1 tsp Sugar
7g Active dry yeast
66mL Whole milk
75g or 4 large Egg yolks
38g Mashed boiled potatoes**
250g Bread flour
5g Salt
50g Sugar
50g Softened butter
Topping
Softened butter or margarine
Granulated sugar
Grated cheese (Eden or mild Gouda)
*You can use a little bit of oil when handling the dough to prevent it from sticking.
*HOW TO PROOF DOUGH after shaping and placing into brioche molds:
1. Place a large baking pan on the lowest rack of the oven or in the bottom of the oven, and fill the pan with about 5 cups of BOILING water. Make sure that the oven is TURNED OFF!
2. Then, place the sheet pan containing the dough and brioche molds in the middle rack of the oven (above the large baking pan that is now filled with boiling water).
3. Close the oven door and allow the dough to rise until doubled in size.
4. Once the dough has risen and doubled in size, take the dough out of the oven. You can also take out the large baking pan filled with water at this point.
5. Then, preheat the oven as usual and bake the proofed dough.
**Mashed boiled potato is my secret ingredient that makes this Filipino bread soft and fluffy. You can refrigerate any leftover ensaymadas and then microwave them for about 15-20 seconds when you are ready to eat or serve and they will be soft again.
