Ingredients
Fresh small cucumbers — 600–700 g
Water — about 900 ml
Salt — 2 tbsp
Sugar — 2 tbsp
Honey — 2 tbsp
Vinegar (9%) — 4 tbsp
Chilly pepper -1
Garlic — 2 cloves, sliced or crushed
Bay leaf — 1
Optional: horseradish, cherry, or currant leaves for aroma
Directions
Wash cucumbers, leave them in water for 30 mins and then trim both ends.
Prepare a clean, sterilized jar. Place garlic, bay leaf, and optional leaves at the bottom.
Pack cucumbers vertically, leaving a bit of space at the top.
Make the brine:
Bring water almost to a boil. Put chilly pepper.
Add salt and sugar, stir until dissolved.
Add honey and mix until fully melted.
Pour in vinegar and remove from heat.
Pour the hot brine over cucumbers to the top of the jar.
Seal, turn upside down, wrap in a towel, and let cool overnight.
Once cooled, store in a cool, dark place.
