Snowy Weekend Treats That Everyone Will Love
TOFFEE SQUARES
1 c. butter
1 c. brown sugar
1 egg yolk
1 tsp. vanilla
2 c. flour
1/4 tsp. salt
Cream butter with sugar & yolk then add vanilla. Add flour and salt. Blend until moist. Spread into greased jelly roll pan. Bake at 350 degrees for 20 minutes. While still hot sprinkle with 1 c. chocolate chips. Once shiny spread chocolate chips and top with chopped nuts. I used pecans, but walnuts would be really good too.

PUMPKIN CAKE ROLL
3 eggs
1 c. sugar
1 tsp. vanilla
1 tsp. lemon juice
2/3 c. pumpkin puree
3/4 c. sifted flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
3/4 tsp. nutmeg (I used about 1/2 tsp.)
1/2 tsp. salt
1 c. finely chopped nuts (I used walnuts)
Beat eggs on high speed for 5 minutes until very thick and lemon colored. Gradually beat in sugar. Add vanilla, lemon juice and pumpkin. Beat well. Sift all dry ingredients and fold into pumpkin mixture. Grease jelly roll pan and cover with wax paper. Grease wax paper. Pour batter into pan and spread evenly. Top with nuts. Bake at 375 degrees for 12-15 minutes or until cake tests clean. Turn cake out on towel sprinkled with powdered sugar. Carefully peel off waxed paper. While hot, roll cake and towel together from narrow end. Place seam side down on cooling rack. When cool, unroll and spread with cream cheese filling. Re-roll and place seam side down on platter. Chill. Cut into 8-10 slices. Top with whipped cream if desired. This roll freezes well (according to Irene).
Cream Cheese Filling: 6 oz. cream cheese, 4 Tbsp. soft butter, 1 tsp. vanilla,1 cup powdered sugar. Mix all together really well until smooth. Spread on cake and re-roll.
