Steamed Banana Cake in Thai Style
.
Portions: 16 cup (16 dipping bowl)
.
Flavor: sweet in banana flavor and a bit salty.
.
Ingredients:
8 ripe bananas (dark / over ripe)
1 cup coconut milk
1/2 cup sugar (optional)
1 tsp salt
1 cup rice flour
1/2 cup coconut meat
1/2 cup coconut meat for topping
.
Equipment:
Dipping bowls
Steamer
.
Method:
1. Mash the bananas together.
2. Add rice flour and coconut milk, mix well.
3. If the bananas sweet enough for you, can skip sugar. If not , add sugar and salt.
4. Add coconut meat. Mix together.
How to steam :
1. Steam the dipping bowl about 5 minutes before add the banana pastry.
2. Add the banana pastry into the dipping bowl.
3. Top with coconut meat and steam around 20 minutes.
4. Use fork stab into the banana cake, if it’s sticky you have to steam more.
Serve:
Thai dessert by banana can eat cold and can keep in refrigerator for 2-3 days.
