How to Make Creamy Thai Green Curry Chicken at Home
Chicken Green Thai Curry
Ingredients:
• 2 cups coconut milk, divided
• 1 ½ cups chicken stock or water
• 500 g boneless chicken thighs
• 2 tbsp finely chopped palm sugar (or light brown sugar)
• 2 tbsp fish sauce
• 2 medium eggplants
• Cilantro
• 1 red or yellow bell pepper, sliced
• 3 tbsp green curry paste (store-bought)
• 15 Thai basil leaves, sliced
• 1 tsp shrimp paste (optional)
Optional add-ons:
• Kaffir lime leaves
• 1 can bamboo shoots
Instructions:
1. Bring coconut milk to a gentle boil.
2. Add green curry paste and sauté until fragrant.
3. Add chicken and coat well.
4. Pour in stock, sugar, and fish sauce. Simmer 10–15 mins.
5. Add eggplant and cook 2 mins.
6. Add bell pepper, cilantro, basil, and bamboo shoots.
7. Taste and adjust.
8. Serve with jasmine rice.
