1🍅 Tomato–Mushroom Pasta Sauce (4 liters / 4 bottles)
Ingredients
• Fresh garden tomatoes – 5.5–6 kg (12–13 lbs), roughly 40–50 medium
• Mushrooms – 700 g (1 ½ lbs), sliced
• Onions – 3 medium, chopped
• Garlic – 12–15 cloves, chopped
• Fresh red chillies – 2–3 (optional, for spiciness)
• Olive oil – ¾ cup (180 ml)
• Fresh basil – 2 large handfuls (use half while cooking, half when bottling)
• Salt – 4 tsp (to taste)
• Black pepper – 2 tsp (to taste)

Method
1. Prep: Wash tomatoes, mushrooms, onions, garlic, chillies, and basil. Slice mushrooms, chop onions and garlic.
2. Cook base: Heat olive oil in a large heavy pot. Add onions and garlic, sauté until soft and golden. Add chopped chillies.
3. Add mushrooms: Sauté mushrooms lightly (do not overcook — just soften). If you cook too long, the sauce may lose its bright color.
4. Tomatoes: Add all chopped tomatoes. Stir well, cover, and cook on low heat until softened (about 20–25 minutes).
5. Blend: Use a hand blender in the pot (or transfer carefully) to puree everything into a smooth sauce.
6. Simmer: Return to the pot, add salt, pepper, and half the basil. Simmer gently on low heat for 45–60 minutes, stirring occasionally, until thick and rich.
7. Cool & prepare bottles: Let the sauce cool for 10 minutes. Meanwhile, sterilize bottles/jars by boiling them in hot water with lids for at least 10 minutes.
8. Bottle the sauce: Pour sauce into hot sterilized bottles, layering in the remaining fresh basil. Leave about 1–2 cm headspace.
9. Seal & protect: Wipe rims, close with sterilized lids. Add a thin layer of olive oil on top of each jar to protect from mold.
10. Store: For long-term storage, process jars in a boiling water bath for 30–35 minutes. Keep in a cool dark place. Once opened, refrigerate and use within 1 week.
