RECIPES IN VIDEO:
Yukon Gold potatoes
Low sodium soy, tamari or coconut amnios - I use about 2 tbsp for sauteeing and flavoring veggies
Nutritional yeast…I do a little less than 1/4 c
1/2 onion chopped
1 zucchini chopped
1/3 C Corn ( I like white)
Peppers - as much as you want
2 TBSP Hummus - either homemade or store-bought. Cedars make great fat-free and oil-free hummus. They also have other types that I love. You can find the links to their hummus below this recipe.

POTATO WAFFLE:
potato flakes
water (you can use veggie broth or plant milk instead)
seasonings of choice
POTATO CURRY
2 cloves of garlic
1/2 large onion
3-4 large potatoes
1 TBSP curry powder
1 tsp garam masala
1 tsp turmeric
1 can of light coconut milk
1 tbsp tomato paste
5 oz fresh or canned tomatoes
1/2 - 1 C peas
large handfuls of spinach
Cook in the Instant Pot on high pressure for 15 minutes. Manual release
On the stove top, cook until potatoes are soft
POTATO CHILI
1 tsp chili powder
1/2 tsp chili flakes
1/2 cilantro
1 -2 cups of corn
2 cloves of garlic
1 onion diced
1/2 tsp oregano
3-4 Yukon gold potatoes
1/2 tsp thyme
32 ounces veggies broth
1 tsp smoked paprika
1 tsp cumin
1-2 cans of white beans
Put in the instant pot and cook on high pressure for 15 minutes. Manual release
on stovetop cook until potatoes are
