I'll be getting ready for Christmas dinner with my husband’s help and I make some treats in this slow living silent vlog episode. You'll see me clean up a bit, creating a cozy and pretty space. There's also a baking video where I make some delicious treats. It's all about taking it slow, enjoying the holiday vibes and making things look nice. Clementine & Chestnut Trifle

For the sponge:
6 eggs
6 tbsp sugar
6tbs water
8 tbsp flour

180° C - 12 minutes

For the caramelised clementines:
16 clementines
125g caster sugar
3 tbsp water
1½ tbsp orange blossom water
3 tbsp cognac
⅛ tsp salt

For the caramelised chestnuts:
180g cooked, peeled and baked chestnuts, roughly chopped
75g caster sugar
2 tbsp water

For the chestnut cream:
2 egg yolks
30g cornflour
50g sugar
vanilla bean extract
1/2 l milk
1 tbsp butter
200g mascarpone
180g sweetened chestnut puree
3 tbsp cognac
600ml whipped to soft peaks
