Usually Casseroles are most comforting meals, and mostly they are filling and satisfying at the same time. Those who love mashed potatoes they will surely love this casserole too. Melt in your mouth mashed potato balls, on the bed of chicken mince n veggie mixture and all topped with rich creamy sauce. Try it once and you will fall in love this beauty.
Ingredients:
Oil 4-5 tbsp
Onion 2 medium (chopped)
Capsicum 1 large (diced in small cubes)
Carrots 2 (diced in small cubes)
Chicken mince 400 gm
Ginger garlic paste 1 tbsp
Black pepper crushed ½ tsp
Red chili flakes 1 tsp
Cumin powder 1 tsp
Garam masala powder/all spice powder ¾ tsp
Salt 1 ½ tsp
Canned corns half cup (optional)
Potatoes 1kg
Black pepper crushed ½ tsp
Red chili flakes 1 tsp
Salt 1 ½ tsp
Shredded mozzarella cheese 1 cup
For Sauce:
Cream cheese 3 heaped tbsp
Cream 2 heaped tbsp
Milk ½ cup
Mozzarella cheese shredded ½ cup
Red chili flakes for sprinkling on top
Method:
Firstly boil potatoes, and mash until smooth. In other pan, heat oil, saute chopped onions until translucent. Now add capsicum and carrots, fry for few seconds. Add chicken mince and ginger garlic paste, continue stirring, now season with salt, black pepper, red chili flakes, cumin powder and allspice powder, add corns. Keep stirring until the mixture is dried. Turn off the flame.
Now season the mashed potatoes with salt, red chili flakes, crushed black pepper and mix shredded mozzarella cheese with your hands, make small balls (around 28-30 balls).
For the sauce; mix together cream cheese and cheese with spoon, gradually add milk, you can add more if it looks thick.
Other Option: you can make traditional white sauce instead of the above sauce, but I personally recommend the cream cheese one.
Take any oven proof dish, spread the chicken mince and veggie mixture, topped with mashed potato balls, pour the prepared sauce evenly. Sprinkle some shredded mozzarella generously, garnish with dried parsley or red chili flakes. Bake on 220 degrees until cheese turns golden and bubbling starts.
Serve hot, and enjoy the creaminess of this divine beauty. This can be served with garlic bread and any salad for a complete meal/Iftar.
