Papad churi or papad ki churi is a traditional Rajasthani side dish that is served with the meals. It can also serve as a decent evening snack. It is basically a mixture of crushed papad with ghee, fried onion, and chilli powder. There are many different variations of this dish – some prefer to add tomatoes or bhujia sev or raw onions instead of fried. All of them taste equally good. I, personally, love to make this variation because it only takes 10 minutes to make it.
Traditional Marwadi / Rajasthani dish served as an accompaniment to any meal or as a snack.

Ingredients
2 Roasted Papad bikaneri or lijjat
1 small Onion finely chopped & fried
1/2 tsp Red Chilli Powder
1/2 tsp coriander powder
1/4 tsp chat masala
Coriander leaves for garnishing
Instructions
1. Fry or Roast 2 papads. Preferably Bikaneri or Lijjat (use 3 papads if using Lijjat).
2. In a mixing bowl, crush the papad to the desired size. Some prefer the papad to be finely crushed while some like big pieces. It is a personal choice.
3. Add 1/2 tsp of Red Chili powder, 1/2 tsp coriander powder, 1/4 tsp chat masala and 1tsp of Ghee of roasted.
4. Add finely chopped and fried onions. (Skip onion for Jain recipe)
5. Mix all the ingredients well. Garnish with coriander leaves and serve immediately.
Recipe Notes
If you are adding salt to papad churi, be very careful because Papads usually are high on salt.
Serve immediately to maintain the crunch of Papad.
