Cheap & Cheery: Ukrainian Inspired Borscht Cook-Along

Recipe:

Ingredients:

3 medium Beets, shredded
3 medium Carrots, shredded
3 medium Potatoes, cubed
½ medium, or 1 small Cabbage (green or red), shredded
1 can of Diced Tomato (approx 3 cups if using fresh)
1 medium Onion (any kind will do), chopped
1 can of Tomato Paste
8 and 3/4 cups of Water
3+ cloves of Garlic, minced (this is to taste)
Salt, Sugar, & Pepper to taste

For topping:
Sour Cream
Dill

Bring 8 cups of water to a boil in a large pot.
Add shredded beets and simmer for 10 minutes.
After simmering, add shredded carrots and cubed potatoes.
Cook until the potatoes are fork-tender.
In the mean time, in a saute pan, add oil and chopped onion.
Cook on medium heat until soft.
Add tomato paste and ¾ cups of water to the onions, and stir to blend, then add to your large pot.
Add diced tomatoes and shredded cabbage.
Simmer until everything is cooked through.
Add minced garlic to your large pot of borscht.
Cover and remove from heat for 5 minutes.
Stir in salt, sugar, and pepper to your liking.

Serve and enjoy!
We find it to be best served with sour cream and dill as a topping, but this is not necessary if you don’t have those ingredients.
