Ingredients
500g whole raw almonds
300g sugar
75g pure ghee
150ml water
250g full cream milk powder
300ml rosewater
1 tsp freshly ground nutmeg
1 tsp cardamom powder
Method
Grind the almonds to a fine powder with the skin on. Leave aside in a bowl.
Pour water into a medium bowl and whisk in the milk powder gradually.
Do not add all together Keep adding the powder and whisk until all the powder is fully dissolved with no lumps.
Keep aside.
In a pan add sugar & rosewater and bring to the boil on medium heat.
Mix continuously with a wooden spoon until the sugar dissolves completely.
Keep boiling on low flame for 25 to 30 min. Till the texture become syrup like consistency & sticky .
Once you get the syrup consistency, remove the pan from the heat to cool for 3 to 4 mins.
Now, add the milk mixture to the syrup, stir thoroughly and leave aside.
In a non-stick pan, add ghee. Add the ground almonds and fry for 10 to 15 mins on low heat until till changes it's colour to light brown. Do not fry on high flame the almonds may burn.
Once the colour changes add the milk/syrup mixture to the almonds and continue to stir on low heat.Keep stirring until mixture thickens and becomes sticky. Till might take 10 to 15 mins to cook on low flame.
Add nutmeg & cardamom powder.
Remove the pan from the heat & leave to cool.
Cool the entire mix completely.
Garnish with chopped almonds
