I've spent the last few weeks reflecting on everything I observed and learned in the freeze drying industry over the past year, and I want to share what I think it means for where we're headed. Not just the industry as a whole, but how this channel's content and resources will be structured moving forward.

A lot has changed. The technology is evolving. The machines are getting better. There's more knowledge accessible online than ever before, especially with AI scraping videos, blogs, and posts to make information easier to find. But even with all that, this industry is still incredibly niche compared to other areas of food processing. And there are still way more people exploring freeze drying than there are people actually running businesses in it.

That's why I'm doing this as a live stream. I want to give you my forecast for where the industry is headed, especially as some of the largest food brands start positioning themselves in freeze drying technology and how I think that will trickle down to those of us running small, medium, and large operations.
