Today I’m showing you how to make deli style cheddar jalapeño bagels using your bread machine’s dough cycle. The machine handles the mixing, kneading, and first rise. You shape, boil, top, and bake.
You still get that proper bagel chew and golden crust, without kneading by hand or standing over a mixer.
This recipe makes 6 large deli style bagels.

Ingredients
For the Dough
• 1 cup plus 1 tablespoon warm water (100–110°F)
• 2 tablespoons white granulated sugar
• 2 ¼ teaspoons bread machine yeast (1 packet)
• 2 fresh jalapeños, deseeded and finely diced
• 1 cup shredded cheddar cheese
• 3 cups all purpose or bread flour
• 1 ½ teaspoons table salt
For Boiling
• Large pot of water
• 3 tablespoons honey
(or substitute 3 tablespoons white or brown sugar)
For Egg Wash & Topping
• 1 egg
• 1 tablespoon water
• 1 jalapeño, thinly sliced into rings
• 1 cup shredded cheddar cheese

Step by Step Overview
1️⃣ Proof the yeast
Add warm water and sugar to the bread machine insert. Stir to dissolve.
Sprinkle yeast over the top and stir gently.
Cover loosely and wait 5–10 minutes until lightly foamy.
2️⃣ Add mix-ins
Add the diced jalapeños and 1 cup shredded cheddar. Stir lightly.
3️⃣ Add flour and salt correctly
Add the 3 cups flour over the liquid to fully cover it.
Make a small well in the flour and add the salt into that well. Cover it lightly with flour.
Place insert back into the machine.
4️⃣ Run the dough cycle
Select the dough cycle.
My compact Cuisinart runs about 1 hour 30 minutes.
When finished, the dough should feel soft, slightly tacky, and well risen.
5️⃣ Rest and divide
Remove dough and shape into a rough ball.
Cover and rest 15–20 minutes.
Divide into 6 equal pieces for large deli style bagels.
6️⃣ Shape
Option 1: Rope method. Roll into rope, join ends, pinch seam.
Option 2: Poke and stretch method. Poke hole in centre and stretch wide. The hole will shrink during boiling and baking.
Place on parchment lined baking sheets.
7️⃣ Boil
Preheat oven to 375°F.
Bring a large pot of water to a gentle boil and stir in 3 tablespoons honey.
Boil each bagel 30 seconds per side (1 minute total).
Do not crowd the pot.
Transfer to parchment lined baking sheets.
Do not skip this step. Boiling gives bagels their classic dense chew and shiny crust.
8️⃣ Egg wash and top
Beat 1 egg with 1 tablespoon water.
Brush tops and sides.
Sprinkle with 1 cup shredded cheddar and top with jalapeño slices.
9️⃣ Bake
Bake at 375°F for 20–25 minutes.
You’re looking for:
• Deep golden colour
• Bubbling cheddar starting to crisp at the edges
• Bagels firm on the outside but still soft when gently pressed
Cool at least 15 minutes before slicing.

Storage
Store in an airtight container up to 3 days.
For freezer storage:
Slice, wrap tightly in plastic wrap, and freeze up to 1 month.
Toast straight from frozen or bake at 350°F for 8–10 minutes.
