The way we use theories in the Humanities is different to, say, in Chemistry, as far as I know that subject. For better or worse, we don't test theories empirically or try to falsify them. Rather we think, "What if theory x is correct? What can it explain? What won't it explain?? I don't study astronomy or cosmology, but my guess is that some of the theories there are not empirically testable either.
